Avocado Toast with Poached Eggs
Ingredients
- 2 slices whole-grain bread
- 1 ripe avocado
- 2 eggs
- Salt and pepper to taste
- Red pepper flakes (optional)
- Lemon juice (optional)
Instructions
- Toast the bread slices to your desired level of crispiness.
- Mash the avocado in a bowl, adding a pinch of salt, pepper, and a squeeze of lemon juice if desired.
- Spread the mashed avocado evenly on the toasted bread.
- Poach the eggs in simmering water for about 3-4 minutes until the whites are set but the yolks remain runny.
- Place the poached eggs on top of the avocado toast.
- Sprinkle with red pepper flakes for an extra kick, if desired.
